History and Curiosities of the Famous Sorrento Cheese Baby

Bebè di Sorrento is a small, exquisite product from the Sorrento peninsula. Unlike many other local cheeses with ancient roots, it has a relatively recent and curious history.

Here are the key points to understand its history and characteristics:

1. A "tourist" and modern origin

Although the production technique is rooted in the age-old tradition of stretched-curd cheeses (such as Caciocavallo), Bebè was born only a few decades ago . It was created by local cheesemakers to meet the demands of the many tourists who visited Sorrento and the Amalfi Coast. Many visitors, while appreciating the flavor of the local Caciocavallo, often found it too strong or spicy due to its long aging process. Bebè was therefore born as a sweeter, fresher, and more delicate alternative.

2. Why is it called "Baby"?

The name derives exclusively from its characteristic shape . The cheese is in fact tied in a way that resembles a swaddled newborn . It has a rounded and elongated shape, with a narrowing that defines the "little head", making it immediately recognizable on the shelves of local dairies.

3. Differences with Caciocavallo

Although the production process is almost identical, the fundamental difference lies in the time:

  • Raw material: It is produced with whole cow's milk from two milkings (morning and afternoon).

  • Aging: While Caciocavallo can mature for months, Bebè is aged for a very short time . This preserves the moisture of the cheese, which remains white, soft, and with a sweet, milky flavor.

  • Size: It is usually smaller, with pieces weighing around 500 grams .

4. Official recognition

Bebè di Sorrento has been officially included in the Campania Region's PAT (Traditional Agri-food Products) list. This recognition protects the artisanal production methods typical of the peninsula's municipalities (Sorrento, Massa Lubrense, Sant'Agnello, Vico Equense).

How to best enjoy it?

Being a fresh cheese, it's perfect eaten plain with a drizzle of local extra virgin olive oil or paired with Sorrento tomatoes. If you're in the area, you'll often find it grilled on lemon leaves, which lend it an incredible citrus aroma.
